I prefer waterbaths for liquifying honey, Walter Kelley sells a good one
inexpensively that will do 4 five gallon pails per run and is
thermostatically controlled.  To liquify jars or cases of jars I rigged
up an upright freezer with a heat lamp in the bottom and a hot water
heater thermostat in-line on the heat lamp and am able to control
temperatures very precisely.  The freezer shelves are nice for stacking
cases of jars.  24-36 hours at 110 F will do the trick for granulated jars.
