I actually do use a thermostat in my cabinet (which is not an ex refrigerator) because the insulation is such that I can melt wax -- a feature I use as part of my wax cleaning process. Many low-cost thermostats seem unreliable in these circumstances, however I have found that some water-heater thermostats (as used in hot-water cylinders, switching several amps) will work down to the right temperatures and seem excellent for a *low* price (about $10?).
