When I saw this all I could think of was mass spec and honey varietals. A quick lit search provided numerous hits. For example, a 2010 Greek study in Food Chemistry assessing volatile aromatics in 77 "unifloral" honey samples found that:


"Analyses revealed an excellent separation between honey samples according to their botanical origin with the percentage of misclassification to be as low as 1.3%."
