I have been studying a bit on the formations of HMF in syrup,(also applies
to honey)  and find the heat and contact with steel accelerates the
formation.   What I am wondering  does anyone know if this applies to
Stainless steel  or regular carbon steel?   What I am wondering is if a
stainless storage tank is as good as plastic  for storage.   All references
I find only mention"metal"  with my assumption being the acidic nature of
syrup is causing some deteroation.  I have not seen a problem in coated
barrels either,  but have not had HMF testing done on that syrup.
