HMF is created in a chemical reaction between fructose and water in an acidic solution, and follows a time/temperature curve for creation (forms quickly when hot). Pure sucrose and water do not create such conditions, so long as you don't add any acids. So no need to worry. HFCS in a warm place does, and HMF can form quickly.
