I always make my own salad dressings, and I have noticed that by adding mustard (Dijon is my favorite) to olive oil and balsamic vinegar, the mixture emulsifies easily. If you added honey to the mixture, kids would probably eat it. Most kids are not exposed to anything other than overly seasoned commercial dressings, so you might need to experiment with the recipe some. We have found, as I'm sure you have too, that if the kids are involved with the whole salad preparation effort, they are much more likely to eat what results. Good luck!
