I am familiar with tofu, tempeh, miso and soy sauce. These are all fermented and have a long historical significance prior to refrigeration being available. All the regular and flavored soy milks, rice milks as alternatives to dairy have only been possible to develop since refrigeration. Are these modern drink products available in Asia at all or consumed there in the quantities as in the US? My recollection of a few month old Korean infant adopted to a WA state family about 20 years ago through the Holt agency was that she had a sign pinned on her shirt that said "I eat rice." The adopting couple tried to feed her formula(s) and she became very ill. They went back to following the rice sign directive and their Korean baby thrived. They were heartsick that they thought they could do better for her and yet caused her great internal distress and pain.
