I just threw out some milk a mom pumped here (there's a researcher here who
uses it usually, but he was away).

It had sat in the fridge for a day and was good and cold.  The cream layer
on it was so dense it fell off in one luscious blob.

For the baby who needs added cholesterol:  Instead of offering hindmilk as
a cholesterol boost, what if this mom pumped hindmilk, refrigerated it, and
*spoonfed the cream*?  Couldn't a baby consume more spoonfuls of fat than
ounces of hindmilk?
