How old is the baby?  Is the mom taking any medication for the Crohn's,
like steroids, Azulfidine, Asacol, etc?  When you say "large stool after
every feeding every 2 hours", can you clarify that more?  (If mom is on
certain meds, could the baby be having excessive stools or diarrhea from
meds mom is on?)

This link on kellymom refers to research that says that the volume of milk,
the amount of baby's intake, is the only thing that has been shown to be
correlated with infant growth in babies that are exclusively breastfed, not
the fat content:
