Does she eat some particular snack on the airplane or in the airport? 
Many people eat things they would not normally consume because choices 
are more limited during travel.
The other possibility is that she doesn't have a chance to remove milk 
as often, and has more 'foremilk' when she gets around to pumping.
Interesting.
