It's definitely possible!  However, one needs to be careful to:

a) do not prop a leg up under yourself or loosen the seatbelt, this
endangers the mother in a crash
b) do not put your weight on the baby's carseat!  These seats are not
designed to withstand an extra 100lbs of pressure in a crash.  You could
crush the baby if this happened.

I am lucky enough that if I sat up straight and leaned fwd a little I could
nurse my baby in the carseat without leaning over the child, but not
everyone can.  I have a friend who can nurse while the child is fwd facing
and she is still in her proper place as well.  Would never have believed it
if I hadn't seen it!
