I'm a little stumped on this one. Has anyone come across this?

Baby (10 wks)  has been having mostly green poops since a week old.  He's gained 6.5 # since birth and a bit gassy and spitty.  He also feeds for 45 min. at a time. Neither mom nor baby are on meds or herbs.  Mom has normal diet except that she drinks 10 (8-12oz) glasses of water daily.  Yes, that much!  She is not forcing it down, she's in the habit of it since she used to get a lot of UTI's.  Baby pees A LOT - over 20 diapers a day.  Ped ruled out UTI for baby and blood work came back normal.

Okay, we told her that she didn't need to drink so much, but she says that it's hard for you to ONLY drink 8 (8oz). glasses of water.  It's not that she's so thirsty, she's just in the habit and thinks all that water is good for her. 

Question....could too much water intake create a foremilk/hindmilk inbalance which would lead to the green poops, fussy, gassy baby?  How much is really too much (I know this is individual, but what's the creative wisdom on this?) I told her to nurse on one side for a few feeds and let him suck on his fingers or mom's finger after he seems satisfied. He has the big need to suck, so mom has been putting him to her breasts 10-12 times/day.
