I'd try Ellen Satter, but be aware that not all of her ideas are great. The one I personally dislike is putting toddlers/children over 1 yr on a feeding schedule. I asked why put a toddler on a feeding schedule when they were on a "per hunger cues" feeding routine as a baby. The answer one of her staff gave me was less than satisfactory or explanatory: "This is to do with their development". Whatever that means.

After doing my own research I came to the conclusion that feeding a child of ANY age according to their hunger/fullness communications is a better way, since it teaches the child to eat when hungry and stop when full, thus encouraging mindful eating, which is known to prevent obesity and eating disorders. Also, feeding per hunger/fullness cues promotes trust between the child and the parent, i.e. the child trusts that he will be fed when hungry and thus doesn't need to overeat.

Ellen Satter does have a lot of good ideas, though, too.

Subject: appropriate toddler nutrition

Does anyone have any advice about where to find great information on nutrition beyond the first year?  I simply do not understand the flow from human milk to cows milk and so many of the other food choices suddenly given to children because they are a year old.  I've looked into a few certificate programs to become a dietitian or a nutritionist -- but they are all geared for adult diets.  By the time people reach 18, their bodies are so messed up, I don't want to deal with them!  (Including my own!)
 
Any books, programs, classes that anyone has found good information?
