as far as i know the problem with UHT milk is not the pasteurization
but the homogenization. it's responsible for the change in taste and
some believe also for certain allergic problems due to the different
protein/fat structure.
pasteurization of cows milk is a safe and rather minor technological
procedure. as for homogenization, i'm not so sure.
you can buy non-homogenisized milk from demeter dairy producers.

and to get back on topic: pasteurized ebm is still human milk. formula
is pasteurized, homogenizised, dried, skimmed (and what else i don't
even want to imagine) cows milk mixed together with loads of
artificial vitamines and "stuff".
in my opinion that makes a BIG difference.
