Here's a trick I learned from the resturant business. Wack the stem (or root
section as had as you can on a flat surface. You should be able to remove the
core. (If it's a tough head you may have to cut around the core) then run
water into the hole you made. Pry the center apart a little. It should be
easier to peel the leaves away.
