When moms inquire about becoming donors, part of the process is that both mom
and baby have their physician(s) sign off that they are in good health, doing
well, etc. so the Milk Bank does have record of the baby's age.

A situation that might alter the age consideration is if a specific kind of
milk is in high demand.  For example, a vegan mom with an older baby might be
sought out as there are times when "non-dairy" human milk is extremely
beneficial for certain recipient(s).

Let me tell you that there are few things as impressive (to me) as seeing
~1000 oz. of human milk all in one place ready for pasteurizing!
