Marla,
Many of the components in milk are heat sensitive. Holder pasteurization, used by all HMBANA milk banks, retains as many nutritional and immunologic components as possible while eliminating pathogens. Sterilization is done at a higher temperature and so destroys more of the heat sensitive components.
Research has been conducted on Holder pasteurization and human milk for decades, so we know that it works and we know how different components of milk are affected. There is not nearly as much research on sterilization of milk.
