I think at other times lactnet has discussed whether changing mom's diet increases the fat component of the milk, and the answer was not.  

What will specifically increase the percentage of fat is the frequency of feeding.
Mom might want to pump more frequently for a higher percentage of fat per feeding, or even to be able to skim off the fatty portion a few times a day to give them just some "cream."
