Good question and I do agree with you wholeheartedly.
The answer is extremely simple - the venue is neither hotel nor 
conference center.
It is a hospital and that is a hospital policy - no ifs, ands, buts or 
pitchers.
But it is a free venue for us and thus I'd rather work around their 
water requirement then pay $$$$ for the hotel with the 
environmentally-friendly and code-compliant jugs.

When we will have better name recognition, a lot of sponsors and a huge 
audience that will outgrow the capacity of the hospital auditorium 
(hopefully - in a year or two), - we will "grow" into the hotel. But 
right now - free hospital conference center is a perfect setup to keep 
us providing BFM education to NJ doctors and LC's while keeping the 
registration rates as low as possible.

You know, the ugly face of capitalism ;D
