I am somewhat surprised that reading levels for patient literature was at 8th grade levels!  The New York Times is written at a 5th grade level - at least it was in the 1970's when I was doing my teacher training!
Morgan - that was an excellent summation of learning methods and abilities.  It is so important to keep this in mind when preparing for an audience that is mixed in regaurds to education level/ability, culture, etc.  Also, to Dawn's point that when people are under stress and filled with anxiety - which they usually are in a hospital setting - we need to use as many methods possible to get the information to 'stick'
