Imagine a doctor taking care of a child in the hospital saying "Well, we've
run out of human blood, let's transfuse some cow's blood and see how the
child responds."

Cow's milk is antigenically very offensive to humans and overt manifestations
occur in a significant percentage of people.  Less obvious problems probably
occur in everybody.
