Try sending the following command to listserv:

set lactnet nomime

It sounds like you are now getting mime digests (listserv senses from
your mail program if it is mime-complient, and if it is, sets you to
mime by default).  They can be cool, but they can also be a pain if
you aren't used to them (or if your mail program doesn't handle them
well).
