There was a World Breastfeeding Week folder on breastfeeding and the 
environment a few years ago (Breastfeeding: Nature's Way), with all 
kinds of statistics about how much waste was created by formula cans, 
how much energy consumed in heating it, etc. Those would be great things 
to include in an environmental studies book. Breastfeeding is the 
ultimate sustainable food source, so it could get a mention under 
sustainability as well.
