In the moms I've worked with whose babies have multiple food sensitivities
this is a common problem.  Ideally these moms should be working with a
registered dietitian to help come up with a diet.

I wouldn't worry about the peanut butter unless baby is still fussy.  Yes, it
is a risk, but not keeping mom healthy is also.  An alternative might be to
use almond butter or another nut cream.  Nuts and seeds added to items are a
great way to add calories and needed nutrients.

Avocado is another favorite of mine for boosting calories.  It can be added
to salads or be made into a dip.  Meats too can help.

Some Mayonaise is milk free, high in calories and a great addition to food
for flavors.

Many moms don't think about getting a complete protein meal for breakfast
when they have to eliminate dairy and eggs.  Some seeds or nuts along with a
grain makes a good complimentary meal.  Soy milk if ok with baby would also
be good if on cereal.

Has she found a milk-free margarine?  That can help a lot.  In the USA Willow
Run makes a soy margaraine.  Parkay squeeze margarine is also ok according to
one of my moms.

Depending on mom's original weight, some loss will not be a problem.  In
fact, it may help her to just adjust weight to a healthier one with a
healthier diet (more homemade food). If she is underweight to start with she
needs to work with someone knowledgeable.

Hope this helps.  Many moms do stabilize weight after losing about 10 pounds.
