you could look into the GREEN (global rivers environmental education 
network) stuff and see if that is what you're looking for - www.green.org.  
once independent, it is now a program of earthforce - www.earthforce.org.  
water quality monitoring and watershed education are just two components... 
and i think it is targeted toward 6-7th grade.

a simple way to define the concept of Ph level as it affects the health of
streams (how do you explain acidic versus basic in just a few words)?

citizen science stream monitoring programs appropriate for kids ages  8-12?
