Answer:
Use El-Cheap telephones from the "samsco" store.  The whole deal costs less than the metal armored cable!  
If you construct the rest of the electronics package to conform to telphone interface standards then you're
ahead in the game.  The mantainance routine is simple and cost effective:  pitch and replace.
If someone writes me directly, I'll send a schematic of a phone to gizmo interface that'll work in most cases.
