Jon,  If the lights are bright enough, how about taking Ian Russell's 
idea, but modifying it so that the light from the fibres falls on the 
visitor's face.

i.e. in a light controlled area set a mirror that the visitors can see 
themselves.  Surround the mirror with the light fibres pointing at the 
visitor in front of the mirror.  Visitors should be able to make all the 
fibres one colour, or different colours at the same time.  They will be 
surprised by their complexions!  The learning potential is (partly) that 
perceived colours of objects are dependent on the colour of the object 
and on the colour(s) of the illuminating light.  And of course that 
optical fibres conduct light and are neat toys.  (With a bow to the 
Exploratorium's Bridge Light exhibit.)
