Regarding blacksmith shops, your date range does make it a challenge.  Seems
they found and excavated a blacksmith shop at Fort Bowie, AZ but the date range
there is 1862 to 1894.  Also found and excavated a blacksmith shop at the
Harmony Borax Works in Death Valley, but that's 1883 - 1888.  I'll keep
looking.
 
To another query, there's a nearly perfect arrastra at Bate's Well in Organ
Pipe Cactus National Monument, Arizona.  National Register?  Don't know.
