I have listed several recordings devoted explicitly to music associated
with Shakespeare in the file detailing the first of Pickett's extensive
series on the subject for Philips:

Were it not for Philips' demise, that would certainly be the place to
start, but finding the recordings as cut-outs remains an option.

Regarding accessibility, I have found that even elementary school students
might respond best to rather complex and unfamiliar music.  I've been doing
a little "music appreciation" session every Friday, and I run the gamut on
material from around the world and throughout history.  Predicting what
they'll like best is not straightforward, and I would not suggest leaning
toward the simplest material.  Let them hear the songs you like best,
unless you're going to take their response personally.
