Peter didn't finish the math for you.  If there is 82% sugar, and 17% water,
that only leaves 1% for all other constituents.  Then we can subtract ash
(average about 0.2%), which leaves only 0.8% for all the amino acids,
proteins (including enzymes), organic acids, and vitamins.
