This seems like a fair question, but it attempts to create a false
equivalence.  One cannot shill for the environment or health, one can only
"shill" for a product that is sold.  
Nonsense,  one of the silliest things you have ever said. Shills for high priced food and less humans are absolutely no different.  You can claim its "for the environment"  but short of removing yourself (not you personally but in general) they miss the point that smarter farming with better yields helps the environment. A quick look at several locations around the worlds shows that.

What many of this thought process miss,  is the true reality of the options. None of these want to point out how OP or SYP effects bees..  whan was the last report you read on OP in the environment?  No this movement is about blindness.  the inability to see past a headline,  or the front of your own beehive.







    
The good news is that people tend to want to buy stuff, even at much higher
prices, that can be proven to be ethically-produced, so non-GMO,
no-added-hormones, antibiotic-free food sells much better than food that
cannot make those claims. 

Another  dandy mistruth.  Not even close to reality.  anyone who checks facts will see that.   Some have bought into the "whole foods" myth,  But its a sales gimmick  that doesn't pan out when you do the real math.
