To change back to the old format, hit compose message, the lower right hand
corner has a small arrow, (next to the trash can) click that arrow and
choose temporarily switch back to old compose. You will get a message
saying "Thanks for trying out the new compose"

The old compose will be going away soon. If you couldn't find something you
were looking for, you may want to review all of the changes or revisit the
brief tour.
"

One advantage is you can be writing an email and hit compose and a new
email will pop up in a new window so you can have two open at once. Before
you had to put one in drafts.

So you may as well get used to it because they are not going to let you
keep the old one.  Be sure to complain to google about anything you dislike
about it..
