I'm assuming these supers are uncapped, otherwise, how would this work?  


The assumption is bees would never cap unripe honey so its only open cells your worried about.

A friend of mine just sets his bottling tank to a slow drizzle in a room with a dehumidifier. The exposure to dry air  as it drains from one tank to another works well for him on small batches.
