Mark,
 
For every question of this sort, your going to get umpteen answers.  So,
here's mine:
 
I would use some Bee-Go and force the bees down, then remove the top two
supers and extract them.  TAH-DAH!  See how easy that was?
 
I agree with Allen that making them move the honey may do more harm than
good.  So, just get what you can from the the top two and then they'll be
limited to filling up the rest.
