I set my thermostat to come on at 105°F and the range of the thermostat is
such that it turns off at 112°F.  I keep a pretty close eye on the jars and
get them out ASAP (where P = practical).  This will cause the white cappings
to turn gray but their shape is pretty well preserved and they are quiet
saleable.
