Great flavour but it was always said that you could never win prizes for it as the viscosity is low at typical water content (probably 17.5% for the UK).

I have only seen 'pure' lime honey once.  It was single brood hive that someone (unnamed) was supposed to be managing having refused my help.  Unfortunately they had not put on any supers by the time the lime started to flower.  Goodness knows why the colony had not swarmed - there were more far bees than could fit in the box.  At that point I was asked to take over; I put on three supers that were quickly filled with the distinctive pale green, minty honey from the avenue of about 40 lime trees beside the hive.

No doubt someone will now tell us about all the prizes they have won!
