Dear Jeff,
As far as I know you can extract uncapped honey assuming that the
honeyflow stopped about a week ago. During this time bees convert nectar
into  quality honey. You can make a test: Jerk with the comb (in
horizontal level) and if no honey drops out of cells you can extract.
