I am a sideliner with 20 hives that extracts about 45-50 medium supers per season.

High humidity is a problem during our Alabama summers.

Being part time it works best for me to process 2 supers per weekend, and see the batch through to bottling and taking to market for retailing on a weekly basis.

I bring the 2 supers into my garage which is serviced by our central a/c unit and therefore already lower humidity than outside.

I also run a dehumidifier in the garage that keeps the humidity in there at a consistent 35-40%.

I set the supers on a floor fan turned horizontally and set the fan to ‘high’ with the air blowing through the supers.

I let the supers ‘dry’ in this way for about 48 hours.

I use an Atago digital refractometer and post extraction readings never fail to come in at the 16-17% range.

This is slightly dryer than most on the market, it makes for a very thick and flavorful honey, and most customers can appreciate the difference.
