NK> Does anybody know how to differentiate (chemically,
NK>physically, organoleptically, etc.) fir honeydew honey (Abies alba), from
NK>spruce honeydew honey (Picea abies). If these two kinds of honey are
NK>mixed, does exist any method for proofing amount of one in another. Does
NK>exist literature or official methods

The information I have is that, depending on the insect, in general
honeydew from Alies alba has a greenish tinge, while Picea abies has
a redish tinge. You might try the Institut Fur Honiganalytik in Bremen
for better information.
