Seriously, producing honey has always been hit or miss. Bloom periods, nectar flows, market prices, these things have never been regular nor predictable. This is why most pollinators are generalists, adapting to whatever is in bloom, and why so many flowers are generalists as well, not being closely bound to any particular pollinator. The close match of pollinator and flower is the exception, rather than the rule.
