Actually, when it says it can detect something as small as 100nm
particles, it would be easily able to see something that is 7000nm or 7
micrometers.

The trouble with this technology would be getting a flourescent tag on an
antibody specific to Nosema ceranae or Nosema apis and for the price tag
we would want to pay.

The trouble I see with getting smart phone microscopy is the physics of
optics.  Most of the bulk and weight of microscopy now is just in getting
the lenses held in the right position and held steadily and being able to
adjust the focal distance easily.  The smartphone might be able to take a
picture attached to a microscope, but the physics don't lend themselves to
having a very small piece of equipment.
