Honey is sold clear, creamed and naturally set in the UK.

The latter is more likely to be sold by small scale hobby beekeepers; creaming honey gives a more reliable consistency and less risk of frosting, so is preferred by commercial beekeepers.

I find that clear honey now outsells set by 3:1.
