My understanding of UK law is that bees are wild animals and therefore do not trespass.  

If that were the case you also would have no basis for claims.  Here in the US  lets say I keep dangerous bees  and someone gets killed because of my bees.  Show proof I knew and boom  you win.   Same goes true with cattle,  If my get loose and trample your corn,  I owe you.  Bees kept commercially (or as a hobby)  are considered livestock,  every city and town I have ever heard of treats them as such.  Should you charge pollination fees  you at that point establish you have some control over them. No longer wild animials.
