Dear all

Two points arising from the recent correspondence about dissolvong sucrose
in water:

1) It is often assumed that 2lbs of sugar to 1 pint of water (1.6 Kg sugar
to 1 Kg of water) is the same as 2 Kg of sugar to 1 litre of water.  Clearly
it is not the same.

2) While 2 Kg of sucrose will dissolve in hot water the solubility of sugar
decreases as the temperature drops, and a 2Kg of sucrose to 1 Kg of water
nixture will start to crystallise at around 15 degerees C (60 degrees F).
