That's your problem
there has to be air in the bag and it cant be too full either
no matter what size of bag one uses. You can play with that part.
The cut is diagonal and not too long either,  just shot of the length of
the air bubble.
If done right with a very sharp quick cutting blade the bag relaxes with
nothing overflowing
Yes if the lid is on too much of an angle some may flow out.
Done this hundreds of times.

The crowd will take that down in now time depending on whether or not they
want it.
Then when empty one peels it off and replaces if necessary.
Putting things under, around and pressing against the bag changes the
dynamics.
