For those interested in honeys tastes (all "s"
intentional), this article introduces a scientific
methodology to select honeys jury members and to make
honeys tatses vocabulary objective:
http://www.apiservices.com/articles/fr/analyse_sensorielle.htm
(article issued from CARI studies, an excellent
Belgian institute, article also available in spanish).
Odours are decomposed in "odours references" whose
organic compound is known. Does anybody have
references about studies dealing with organic compound
in nectars analysis ?

Hervé
