Bob Darrell just outlined his method for making creamed honey.  Unusual as
it is, I know a beekeeper in the Northeast annually making many tons this
way.  He once told me "the key is knowing where to get the honey.'  'We get
it from a certain location in Canada and it always works, but when we try to
use our own honey we can't get it to come out smooth."

I can vouch for the latter.  I have often tried this with high-quality
'white' alfalfa honey, and it sets up grainy with a yellow cast.

Perhaps I should try some Darrell honey!
