Using gravity in the honey house:  >>>  get stuck with how to load the supers to the second floor.
 
Are pumps currently used for moving honey from either the extractor or honey sump to a holding tank strong enough to use as lifting pumps lifting the honey a height of 16 feet?

I would heartily recommend a one story facility! Material handling is vastly better on one story with forklifts, etc. 

Use a progressive cavity pump to put honey anywhere you would like. I pump 14 ft up (4+ meters) and 50 feet across a room to a large milk tank on columns. 

I would also recommend higher ceilings, at least 14 ft. Above that and you will run into issues that require more $$ to meet building codes(at least here). 

Also recommend the new closed cell foam that is very, very efficient in keeping temperatures either cool or warm. I went with 3 inches in the sidewalls and 18 inches of cellulose in the ceilings. 

Also I would go with a 2 degree slope with center trench drains. That is a big deal to get water off your floor. If you can afford it, go with urethane epoxy coatings of a few millimeters thick. Otherwise water is gather and eat up your concrete. Pay now or pay later. Diluted honey is hell on concrete. 
I would go with LED lighting if you can afford it now, or otherwise go with 6 bulb T8 fixtures that you can convert later as the price falls. I like the 5600 K bulbs.
