Several other "tricks" are to stir constantly while heating and cooling, and 
to use old honey as seed.

Stirring constantly ensures even heat distribution and also dissolves the 
crystals more quickly.  IT also maintains lower contact surface temperatures 
due to more efficient transfer of heat to the honey.

After a year or two, hard granulated honey becomes soft and the granulation 
typically becomes finer.
