The scientific literature shows that acidification have no effect on patogen
control (nosema). I haven't found references about palatability.

I believe bees gather nectar, and asumme Ph of nectar is close to sucrose
(sugar), what varies is concentration, that is quite low.

Bees do the trick from sugar to honey, including Ph change.
